At Mutekiya, the soup which is the most important thing for our ramen, is made three times a day in our kitchen.
We have a policy of making ramen with freshly made sweet-smelling soup every day.

Using a large number of high-quality pork bones and boiling them for 16 hours a day to emulsify at a high concentration, our freshly made soup is well-received for its refined and refreshing taste without any unpleasant odor or roughness that can only be tasted in freshly made soup.

Mutekiya does not use concentrated soup or extract.
We use 100% natural homemade soup.
The ingredients we use may contain the seven allergens required by Japan's food labeling law, including "wheat" and "eggs," and depending on the product, allergens such as "crab," "shrimp," and "milk" may also be present.

Soup

Mutekiya's ramen soup is made from a large amount of high-quality pork bones.
The scum from the broth is carefully removed, the soup is boiled for a long time and emulsified, and then strained twice in order to take all steps to remove impurities, resulting in a smooth, rich soup. The soup is characterized by the refined sweetness and aroma of the rich pork, which can only be enjoyed when it is freshly cooked, as well as an amazingly refreshing rich taste without any unwanted flavors.
Many of our customers are women, and they recognize and appreciate the delicate pork flavor of Mutekiya's soup.
The cost of soup is high, but we do not use leftover soup from the same day because it begins to decline in quality and develop a stale taste which loses freshness and has an increased odor.

Haruyokoi is produced in Hokkaido, a land of heavy snowfall and bitter cold creating wheat that has robustly sprouted and grown beneath the snow through the efforts of the growers who are dedicated to improving the quality of their products.
This wheat is a rare and valuable variety that is difficult to cultivate and can only be successfully grown in Hokkaido's climate.
Haruyokoi flour is grown in Ebetsu, Hokkaido, and milled by Ebetsu Seifun, a local flour mill that works diligently with the wheat.
Mutekiya noodles are made with this flour, giving them the distinctive rich flavor and firmer texture that Haruyokoi flour is known for.

We use backfat from carefully selected domestic brands of pork.
It costs a lot but the sweetness of the flavor is something else.
Like the soup, freshness is the essence of Mutekiya Ramen so we prepare this every day at three-hour intervals.
That is why our flavor is rich and refreshing.

Garlic

Even though domestic garlic is very expensive due to its low production, we offer it directly from Aomori, which is said to have the largest production volume and the best quality in Japan.
Use a garlic press to add as much fresh crushed garlic to ramen noodles as you want.
The rich taste of garlic goes very well with ramen soup.

Leek

We use Kujo leeks shipped directly everyday from Kyoto.
The strong taste and texture make them a perfect topping for ramen noodles. For our ramen noodles with lots of leek such as our NEGI-MEN, we roast the leeks moderately.
The sweetness of the leeks is brought out through the roasting process, giving them more flavor.

Flavored Soft-boiled Egg

Our original flavored soft-boiled eggs are made by marinating fresh soft-boiled eggs in a specially-crafted sauce.
The taste of the specially-crafted sauce, made with a rich natural broth and soy sauce, is very popular, and we make 500 of them in-house every day.

Chashu Pork

Mutekiya's thick-cut Chashu Pork is very popular and is known for it's tender and roasted qualities.
Mutekiya's Chashu Pork is carefully selected from domestic and overseas suppliers in accordance with the season.
Making the Chashu Pork is the most time-consuming and labor-intensive cooking process and it is repeated throughout the day to ensure that the pork is always freshly prepared.

    If placed outside the store, please manage it at your own responsibility.
    We cannot assume responsibility for theft or loss. Thank you for your understanding.
  • We only accept cash. If you are coming in a group, we will combine the bill for all members of the group.
  • For the sake of customers waiting outside, please refrain from lingering after your meal.
  • Not all group members will necessarily be able to sit at adjacent tables.
  • It is refused for hygiene reasons to bring back the leftovers of the product and the order product other than the souvenir.
    Please understand.
  • We recommend visiting MUTEKIYA between approximately 16:00 and 18:00 as a period when you can enter without much waiting.
